Great Tasting Bison Meat Recipes

Bison Chili

1 tbsp canola oil
1 cup chopped onion
1 green pepper, diced
½ cup celery
2 lb ground bison
2 garlic cloves, minced
1 can (28 oz.) diced plum tomatoes
1 can (14 oz.) tomato sauce
1 can (5 ½ oz.) tomato paste
3 tbsp chili powder
1 bay leaf
1 tsp dry oregano
1 tsp dry basil
½ tsp ground cumin

Put oil in large saucepan. Add onion, green pepper and celery and sauté over medium heat until onion begins to soften. Add bison. Stir and cook until meat is browned.
Stir in garlic, sauces and spices. Bring to a boil. Reduce heat and simmer for
30 minutes. Remove bay leaf and serve.
