lb ground buffalo, cooked
1 onion, chopped
½ cup celery, chopped
3 medium potatoes, cubed
4 carrots, sliced
½ cup cabbage,
shredded
¼ cup barley
14 oz. can tomatoes
14 oz. can tomato
sauce
6 cups water
2 tsp salt
2 bay leaves
parsley, peppercorns,
basil or thyme
Saute onions and celery.
Put all ingredients in a large pot, except fresh vegetables. Simmer for one hour.
Add vegetables and simmer, covered, one hour or until vegetables are tender.
You can substitute any vegetables you have on hand. Instead of barley you could
use rice or macaroni, but add only 20 minutes before serving.
