1 1/3 cup uncooked regular rice
¼
cup olive oil or Italian Salad Dressing
½ tsp salt
3 cups boiling
water
2 beef bouillon cubes
1 tbsp + 1 tsp soya sauce
1 medium onion,
chopped
4 stalks celery (approx .2 cups), chopped
2 green peppers, chopped
3
cups diced cooked bison
In a large skillet or walk,
cook and stir rice in oil over medium heat until golden brown. Add salt, water,
bouillon and soy sauce. Cover tightly and simmer for 20 minutes. Stir in onion,
celery, green pepper and meat. Cover tightly and simmer 10 minutes longer or until
all liquid is absorbed and rice is tender.
Serves 4.
